Sausage-Stuffed Flank Steak

Ingredients:

- 1 11/2 pound flank steak (butterflied & trimmed of all fat)
|
|
- 1/2 cup crushed saltine crackers
|
- 1/2 cup chopped tart apple
|
|
- 1 tablespoon minced onion
|
|
|
- 1/8 teaspoon freshly ground pepper
|
|
- 1 tablespoon dry white wine
|
Directions:
Cooking is done in Micro wave. Score both sides of steak and set aside. Arrange sausage in 4 cup measure. Cover with paper towel and cook on High 3 minutes. Crumble meat with fork; drain well. Transfer to large bowl. Blend in all remaining ingredients except soy sauce and wine. Spread stuffing over meat, leaving a 1 inch border on all sides. Roll up length-wise and secure with string in three places. Transfer to shallow baking dish. Combine soy sauce and wine in small cup and blend well. Brush over meat. Cover each end of meat with strip of foil 1 inch wide. Cover dish with plastic wrap. Cook on Medium (50% power) 16 minutes, turning meat over after 10 minutes to baste with sauce. Discard foil and plastic wrap and continue cooking on Medium (50% power) 5 minutes. Let meat stand 3 to 5 minutes before slicing and serving. |
