Meat Ball Soup (Giouvarlaki) w/ Avgolemono

Easy to Chew

Ingredients:

  • 2 pounds ground meat (beef, veal or lamb)
  • 1 onion, minced
  • Boiling stock (chicken or beef) bouilon cubes)
  • 1/4 cup rice (short cook)
  • salt & pepper, to taste
  • 1 egg
  • AVGOLEMONO SAUCE
  • 3 eggs
  • 2 lemons, juiced

Directions:

Combine above ingredients and form into small meat balls. Drop into boiling stock and cook until tender. Add Avgolemono Sauce slowly, while stirring soup, until thickened.
AVGOLEMONO SAUCE
Beat eggs well in blender. Continue beating while adding lemon juice. Slowly add hot broth from soup and continue beating until most of broth has been added. This will keep the Avgolemono Sauce from curdling when added to the soup.
