Fancy Rice
Brenda Avadian, M.A. from California says: This rice recipe is a BIG HIT at parties and is a tasty alternative to regular rice. It is a dish that Armenians serve at special events and for special guests. Note: I have adapted this recipe from two cookbooks Treasured Armenian Recipes (The Detroit Women's Chapter of the Armenian General Benevolent Union) and The Armenian Cookbook (1971 Rachel Hogrogian).

Ingredients:

- 1/4 lb butter (one stick)
|
- 2 cups rice (short grain white works nice)
|
|
- 1/3 cup fine tiny noodles
|
- 1/3 cup Currants (tiny raisins)
|
|
|
- 1/4 chopped fresh parsley
|
- 1 small to medium yellow or white onion finely chopped
|
|
Directions:
Use a pan large enough for about five cups of cooked rice, etc. Saute onions in a tablespoon of butter until soft. Remove onions and set aside in a small bowl. Add noodles and gently fry until slighty brown(for color and unique flavor). Wash rice and drain well (this is important if using bulk or foreign rice sources) Add remaining butter and once melted, add rice and saute a few minutes. Add onions and remaining ingredients. Mix well. Pour hot chicken broth (can be heated in advance in microwave) into rice mixture stirring once or twice. Cover and cook on low until all the water is absorbed. When finished let stand for another 15 minutes before serving. |
