Lazy Dazy Cake

Linda from Sacramento, CA says:
This is sentimental. A true "cake from scratch." My Grandmother, Virtur Tucker, used to make this when I was little. I am including it because it brings back fond memories!

Prep Time: 15 minutes for cake/5 minutes for topping
Cook Time: 35-45 minutes

Easy to Chew

Ingredients:

  • 2 eggs beaten until thick
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter
  • For Topping
  • 5 tablespoons brown sugar
  • 2 tablespoons butter
  • 2 tablespoons cream (milk)

Directions:

Beat eggs until thick, then add sugar, flour, baking powder, and salt. Heat 1/2 milk and 2 tablespoons butter until just luke warm and add to above. Pour into 9x9 glass cake pan. (The recipe does not say to flour the pan or not.) Bake in 350 degree oven for approximately 35 minutes or until toothpick comes out clean.

Topping (to be spread on cake when it comes from the oven)
Combine 2 tablespoons cream, 5 tablespoons brown sugar, and 2 tablespoons butter into a small sauce pan. Heat until syrup is thick. Pour mixture over the cake. Place cake back in the oven until topping bubbles. Remove and let cool. Enjoy with a nice big glass of milk while still a little warm! (But it is good left over too, if there is any left that is!)
