Hilltop House Stewed Tomatoes

This recipe comes from a restaurant in Harper's Ferry, West Virginia. The cinnamon adds a great flavor, and it's healthy too!

Cook Time: 20 minutes

Quick and Easy

Ingredients:

  • 1-28 ounce can whole tomatoes
  • 4 1/2 packets Equal sugar substitute (the small ones, like you get in a restaurant)
  • 1/2 tsp. cinnamon
  • 1 T. cornstarch, mixed with a little water to make a paste
  • pinch salt
  • 8 low fat saltine crackers, crushed

Directions:

Cut tomatoes into bite sized pieces. Pour into 2 quart saucepan, then add remaining ingredients. Cook on stove with low heat for 20-30 minutes, stirring occasionally.
