Pineapple Chicken

Ingredients:

  • 2 tbsp butter
  • 2 large chicken breasts, cleaned, skinned and boned
  • 3 cooking apples, peeled, cored and diced`
  • 1 1/2 cups chicken stock, heated
  • 1/4 cup pineapple juice
  • 4 pineapple rings
  • 3 tsp of lime juice
  • salt and pepper to taste

Directions:

Melt butter in a large saute pan. When melted, put in the chicken breasts and sprinkle with lime juice. Cover, and cook for 4 minutes over medium-low heat.
Season (salt and pepper) chicken, turn it over, cover and cook another 4 minutes at same heat setting.
At same heat setting, turn chicken, re-cover and cook for 8 more minutes.
Add chicken stock, apples and pineapple juice in pan, mix, cover and cook 4 minutes.
Put pineapple rings on chicken breasts, cover and simmer for 2 minutes over medium-low heat. Serve.
