Bavarian Sausage and Sauerkraut

Easy to Chew

Ingredients:

  • 1 slice bacon
  • 1 onion, peeled and diced
  • 2 (19 oz) packages of sauerkraut, drained
  • 1 clove
  • 1/4 cup dry white wine
  • dash of caraway seed
  • 1 cup cold water
  • 1 bay leaf
  • 8 knockwurst sausages
  • salt and pepper to taste

Directions:

Preheat oven to 350.
Put bacon into ovenproof casserole dish and cook on stove top for 2 to 3 minutes over low heat.
Stir in onion, cover and continue cooking for another 6 minutes at same heat setting.
Add sauerkraut and mix thoroughly, put in clove and season thoroughly with pepper and perhaps, just a little salt. Pour in wine and water add the bay leaf and caraway seeds. Mix well, bring to boil then cover and transfer into preheated oven. Cook in oven for 2 hours.
Slash sausage skins on a bias with a sharp knife to aviod splitting the sausages during cooking. Nine minutes before end of cooking put sausage into casserole to be heated through.
